Ingredients for 6 persons: Extra
virgin olives oil Pietrantica
a glass
Fresh sardinians, gr. 700
Onions middle-sized, 2
Pine nuts, gr. 100
Raisins gr. 50
Anchovies salted Pietrantica 6
Saffron
Salt e pepper
Preparation:
You put the extra virgin olives oil pietrantica in a
Saucepan, minced well the onions and you brown it until
that have taken a fine color of gold.
You add the Sardinian carefully cleaned and you removed
the thorns , and blended energetic with a spoon of wood,
crushing with force the Sardinians so as to them in pap;
add the anchovies salted, washed and you removed the
thorns and liquefied in a small sauce-pan with some
drops of oil; left to cook for about 10 minutes.
You pass the compound from the mince-food , replace the
Saucepan on the fire and finished off this sauce with a
pinch of saffron, climbs, pepper, the pine fruits and
the raisins.
If it was succeeded yourselves too dense, it annaquare
with a little of water.
You cover then the Saucepan and left in warm.
This seasoning is suitable to the pasta and particularly
to the macaroni.
