Fritter with gianchetti(the small of the anchovies and sardinians)

Ingredients :
500 gr of gianchetti(the small of the anchovies and sardinians)
two eggs
three spoons of cheese parmigiano
parsley minced
flour
Extra virgin olives oil Pietrantica
Preparations:
Beat the eggs with the cheese, the parsley and the salt.
Wash the gianchetti and clean them from herbs and smalls stones; drain them very well and add them to the mixture together with the flour gently mixing up to form a homogeneous mixture.
Take a frying pan of iron or non-stick, heat it well with plenty of oil and dip the spoonful gianchetti.
When pancakes will turn out well gilt, make her cooked also from the other part.
When they are well cooked lie them down up of the blotting paper.
Can be useful her both hot and cold.
